Thanks to everyone who shared some advice on my post last night! You are all awesome! ?
I think my biggest problem is that since I’ve been working from home, I thought I didn’t need to meal prep. So after the gym today, I’m going to stop for some groceries and do some meal prep! And, if I have time before my meeting, I’ll share my creations with you all!
Anyways, this is my typical breakfast:
– 2 eggs scrambled (because I can’t seem to cook them any other way)
– 2 cups of spinach (1 serving)
– ¾ cups of kefir
– banana
– black coffee
– water

I feel like tofu gets a bad rap but I’m super into tofu! How do you guys feel about tofu?? I like to lightly marinate mine in some coconut aminos or soy sauce and then sear it on both sides until crispy and it’s delicious! But whenever you say tofu people are like ew!???‍♀️ Anyway it’s a great source of plant based protein but be sure to buy organic because 95% of all soy is GMO!! Here I kept it simple with some quinoa, sautéed spinach, avocado and seared tofu with a sprinkling of sesame seeds.
